Greek-style roast chicken
Fixings
750g new potatoes, thickly cut lengthways
2 tbsp olive oil
8 chicken thighs, skin on and bone in
300g cherry tomatoes
100g dark olives
½ little pack oregano, leaves picked
200g pack feta, disintegrated into lumps
2 tbsp red wine vinegar
Technique
Heat broiler to 200C/180C fan/gas 6. Put the potatoes in a cooking tin and shower with a large portion of the oil. Sit the chicken thighs on top, sprinkle over the leftover oil and season. Cook in the stove for 30 mins.
Add the cherry tomatoes, olives, oregano leaves and feta, then shower with the red wine vinegar.
Get back to the broiler for another 25-30 mins until the chicken is cooked through and brilliant. Appreciate it !!!Pasta-al-forno-oven-baked-pasta.
